A hearty and aromatic soup with white beans, Italian sausage, and mixed vegetables. Ideal for a warm dinner on a cold day.
Ingredients:
- 1 lb Italian sausage, casings removed
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cans 15 oz each cannellini beans, drained and rinsed
- 1 can 14
- 5 oz diced tomatoes
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups fresh spinach, chopped
- Grated Parmesan cheese for serving
Instructions:
In a large pot, cook Italian sausage over medium-high heat until browned, breaking it into crumbles
Add chopped onion, minced garlic, diced carrots, and diced celery to the pot
Cook until vegetables are softened
Stir in cannellini beans, diced tomatoes, chicken broth, dried oregano, dried thyme, salt, and pepper
Bring the soup to a boil, then reduce heat and let it simmer for 15-20 minutes to allow flavors to meld
Add chopped spinach to the pot and cook until wilted
Serve hot, garnished with grated Parmesan cheese
