Buffalo Chicken Cauliflower Pizza



With this Buffalo Chicken Cauliflower Pizza, you can enjoy a favourite dish in a healthier way. It doesn't have any gluten and is low in carbs. The spicy buffalo chicken and creamy ranch dressing give it a lot of flavor.

Ingredients:

  • 1 medium cauliflower head, cut into florets
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1/4 cup hot sauce
  • 1 cup cooked chicken breast, shredded
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons ranch dressing
  • Cooking spray

Instructions:

Preheat oven to 450F 232C

Place cauliflower florets in a food processor and pulse until they resemble fine crumbs

Transfer cauliflower crumbs to a microwave-safe bowl and microwave on high for 2 minutes

Let cool

In a large mixing bowl, combine the cooled cauliflower crumbs, mozzarella cheese, Parmesan cheese, almond flour, and hot sauce

Mix until well combined

Line a baking sheet with parchment paper and lightly coat it with cooking spray

Press the cauliflower mixture onto the prepared baking sheet, shaping it into a round pizza crust

Bake in the preheated oven for 15-20 minutes or until the crust is golden brown and firm

Remove the cauliflower crust from the oven and top it with shredded chicken, red onion, and more mozzarella cheese

Return the pizza to the oven and bake for an additional 5-7 minutes or until the cheese is melted and bubbly

Drizzle ranch dressing over the pizza and sprinkle with chopped cilantro

Slice and serve hot
