Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1/2 cup buttermilk
- 1 large egg
- 1 tsp vanilla extract
- Vegetable oil, for frying
- For the glaze:
- 1 1/2 cups powdered sugar
- 3-4 tbsp milk
- 1 tsp vanilla extract
Instructions:
Mix the flour, sugar, baking soda, baking powder, and salt in a mixing bowl
Beat the butter and softened cream cheese until smooth and creamy in a different bowl
To the cream cheese mixture, add the buttermilk, egg, and vanilla extract; beat until thoroughly blended
Mixing until a dough forms, pour the wet ingredients into the dry ingredients
Avoid over-mixing
On a surface dusted with flour, roll out the dough to a thickness of about 1/2 inch
To cut out doughnuts, use a round cookie cutter or a doughnut cutter
Preheat vegetable oil to 350F 175C in a deep fryer or large pot
Drop the doughnuts gently into the heated oil and cook for two to three minutes on each side, or until golden brown
After taking the doughnuts out of the oil, place them on a plate covered with paper towels to catch any leftover oil
To make the glaze, whisk together milk, vanilla extract, and powdered sugar in a separate bowl
Make sure to completely coat each doughnut in glaze before setting it on a wire rack to allow any excess glaze to drip off
Before serving, let the glaze settle for a few minutes
